Conquer your bread fears

There is one thing that people think is near impossible. Homemade bread and They’re wrong.

Today I am sharing my second favourite bread recipe – the first is a brown bread recipe my grandmother uses.

Today I made a double batch of roasted garlic and rosemary artisan bread. It had to be a double batch because I barely take it out of the oven and it’s gobbled up.

This is the kind of bread that you can dip in olive oil and vinegar, toast or just eat plain. It’s absolutely delicious.

Recipe –

4 medium garlic cloves
Olive oil
2 tbsps of granulated yeast (active dry yeast)
3 cups I warm water -slightly above body temperature
5 1/2 cups of flour – more for dusting.
Just less than 1 tbsp of salt
2 tablespoons rosemary
Butter

First preheat your oven to 425 degrees. Then take a couple garlic cloves – I use two but the recipe technically calls for four medium bulbs – cut the top of the bulb off and dip the bulb in olive oil or pour a tiny bit onto the open top. Then you put the bulbs in tinfoil and into the oven for 45 minutes.

Take them out. Let them cool down.

Meanwhile put the yeast and water in a large bowl. This dough will rise a lot!

Add everything except the butter. Mix well. It will be sticky. That’s exactly what you want.

Put a plastic cover on the bowl or plastic wrap and put it in a warm spot to rise for three hours.

When ready grease and flour cookie sheet. Place a metal pan with water in bottom rack of the oven – this gives the bread a nicer crust.

Preheat oven to 450 degrees sprinkle dough with flour and wet your hands. Divide the dough into two separate even loaves. Shape into balls space apart on sheet and sprinkle with flour generously.

Score each with an X or other mark before putting in the oven.

Bake for 30 minutes. Let cool for 15 minutes then butter crust and enjoy!

Sprouts are emerging!

Today I had the morning off so I spent most of it catching up on laundry, tying up loose ends, running in to get some groceries and new vacuum cleaner part.

When I came home I took a peek at my little mini green houses where I had planted some seeds last week. Usually they take 7-10 days to sprout. It’s been about 5 and I can already see some fairly tall sprouts! Next week I’ll be planting some peppers, tomatoes and leeks.

My herb garden will hopefully be happy to live on my window sill indefinitely, while the others will be transplanted into bigger containers then eventually outside.

Egg follow up

Today I found this web site that talks about the different reasons that eggs are oddly shaped, soft shelled, no shell or discoloured. So I thought I would share the link as a follow up.

On another unrelated note today is my day off and after a busy weekend of work I started working on an Easter garland, decorating for spring and sprucing up the house.

I love this time of year, things are ready to come back to life and we are all just waiting to shed the winter layers and get back to enjoying spending time outdoors.

End is near!

I have been told that pre soaking your seeds before you plant them is the best way to get results.
Mostly bigger seeds. Also they say you should file the edges of a pumpkin seed except for the point slightly so that the water can really soak in.
I didn’t know that when I set my seeds in water last night. But I’m hoping that at least just soaking them will help.

I do realize it’s early to plant seeds. But I haven’t had much luck with pumpkins. So this year I’m going to try something different. I still need to run out and get soil to plant them but I hauled out my planting trays and my seeds are soaking right now.

This morning I was wandering around the yard looking at what is normally the vegetable garden that I have good luck keeping the dogs away from but now it’s just an extra place for them to run. I can’t wait for the snow to melt.

Don’t get me wrong I absolutely love winter. But it’s almost spring now and we have certainly had our share of winter this year.

Itching for spring

I’ve been trying to stay on track; staying healthy, spending more quality time with Mike doing something besides watching tv and sleeping. Now that I’m working 5-6 nights a week getting home between 830-11pm most nights I miss most of the wind down time and supper time but we are still trying. We have started a puzzle – inspired by my parents we have begun a complicated 1000 piece puzzle.

We have taken a break from said puzzle as we almost killed each other working on it this weekend – and we have only just started it!

Also I’m in the mood for spring I’m itching to plant some seeds indoors and I’ve taken the dehydrator out of the pantry to make healthy snacks. Pineapple mostly. It reminds me of warmer months.

Eggcellent

Yesterday when I went to collect eggs from the ladies I had a big of a shocker.

One of the eggs had no shell – just the membrane! I know maybe it’s a sign of a lack of calcium but I don’t think this is the case. Just an off day maybe?
This ever happen to anyone else?

Over it

Lately I’ve taken myself out of the Facebook loop. The app is off of my phone, I don’t go on it. I’m over Facebook. I don’t care what the majority of these people are doing on a daily basis.
Since then it’s all I hear about. Check out our Facebook page, check it out on Facebook.
I am so sick of Facebook. Recently someone sued for damages in a lawsuit and part of this lawsuit included the amount was the amount of time they’ve missed on Facebook. Facebook. Are. You. Kidding. Me.

Can we go back to walking and not knowing what people we don’t otherwise talk to are up to. The latest woes, the most recent pictures and I’m just not into it anymore.

Am I the only one? Has Facebook really taken people by storm – still?

Dinner party

The month of January can be a little dull and repetitive. Kind of like the Monday of months at least it has been in years past.
This year was different. Since we have been crazy about the show Come Dine With Me Canada for the past couple of years. So we each took a turn hosting. Me, my mother, my father, my brother and mike. We each spent a night hosting and serving the food we spent the day making. An appetizer, main and dessert.
I didn’t take pictures of most. But I wish I had. It was just for fun but we threw 5$ in the pot each and rated each other 1-10. We actually video taped it using my Mac and then for the last night we watched them all.

My mothers was delicious as always, she’s a great hostess. She made a roasted vegetable soup and capresse salad as an appetizer and chicken Capella for the main with a chocolate brownie and coconut mousse for dessert.

Mark was next he made a corn chowder with a tossed salad for his appetizer.
His main was a trio of meats. Liver and bacon, peppercorn mini steak and some spaghetti.
Dessert a cinnamon roll – pillsbury that little sneak 🙂

Mikes was next. He made baked raviolis, main was slow roasted pulled pork with homemade coleslaw, potato chips and homemade buns. His dessert was a vanilla bean cheesecake.

Dads was a deep fried bonanza. Starter was bbqed smoked ribs. Main course was fish and chips and homemade slaw. Dessert was a deep fried donut.

Mine was the final night. I made homemade rosemary and roasted garlic bread as a dipping bread as a pre appetizer. I made seared scallops on fried wonton wrapped. Main was a honey sesame garlic bowl. Dessert was a homemade lava cake.

Scores were in. I won – tied with my dad.

So much fun! Had a great time and it was so great not cooking four nights 🙂

Resolutions

I’ve been thinking about my past resolutions and if I’m honest to myself I’ve never succeeded.
So instead of continuing the trend and then feeling guilty later on down the road I’ve decided to go about it another way. I am going to focus on quality.

I will eat better quality food and less crap. Enjoy the time spent working, time off and spending time with others – and less time with technology. I’m hoping this will help me eliminate bad habits with better healthier ones.

Here is to a better year.
